I made another Christmas baclava this morning. I made one two weeks ago, so I could take it to my sister’s house on our trip north. But this one is to share with friends here, and for me and my husband to enjoy. It’s such an easy recipe. The most difficult thing to do is to remember to count the layers of filo pastry! Though conveniently, the packet I use has exactly 16 layers, so if I forget I can count the layers that are left. The baclava has a berry fruit mince in it, and a lemony syrup, and is so yummy. I can’t imagine a Christmas without it now, thanks to my friend Peony who introduced me to it last year.
