Somewhat to my surprise, Christmas Day was a delight. I was a little surprised because it was just the two of us. There were many delights during the day (sleeping in, no stress, eating when we wanted, a lovely warm day, etc), but I’ll just focus on one of them here, and perhaps the simplest one of all. It has to be food, of course! I like to use the last of the spring asparagus (that thankfully hangs on in the shops until Christmas Day) for my Christmas Day meal. This year, I had a perfect avocado (courtesy of the recently-visited avocado orchardists, my sister and brother-in-law) that had ripened precisely on time, and decided to do a big green salad with lettuce, avocado, and blanched asparagus, with a delicious easy garlicky basil dressing. It went perfectly with the boiled buttery new potatoes. I’ll be making this again. Green beans in place of the asparagus will work well with it for the rest of the summer.
